Celery, Tomato and Jalapeno Relish



This is a really excellent relish - very easy to make and goes with almost anything.  (I put some onion seeds into this one - but, while adding nicely to the taste, they end up looking like mice droppings, so avoid!)

1 cup sugar
4 t salt - celery salt if you have it
½ t dry mustard
½ t ground cloves
½ t allspice
½ t cinnamon
½ 2 celery seed (optional)
3 cups cider vinegar
Large bunch of celery, chopped
12 large tomatoes, skinned and chopped

12 Jalapeno pods, deseeded and sliced  (You can use any pepper, if these are not available)

Mix all the ingredients in a large, wide pot.  
Bring to the boil and then reduce to a simmer for about an hour. If the mixture has too much liquid, carry on simmering until it is thick.

Spoon into sterilized jars and seal after letting them cool for a while.
